Dough Mixing
Dough or paste mixing is considered one of the most
complicated mixing specially as a continuous process. It involves a lot
of energy and effort. The final product comes out in the form of
different consistencies of pastes and dough and putties.
The most commonly used batch instrument is the kneader. The batch
kneader contains two typically sigma shaped contra-rotating arms or
paddles. They fold knead and mull the ingredients together.
A continuous dough mixer consists of an interrupted screw, which
oscillates with both rotary and reciprocating motion between pegs in a
cylinder. Here the dough needs to be continuously kneaded and folded and
displaced. Dies of various shapes and sizes can be used to create the
necessary amount of backpressure.
